Aperol Spritz is based on an Austrian recipe dating back to the 19th century. At that time, Austrians added water to their wine to "sweeten" it. It was later, in the 20th century, that the mixture with Italian prosecco made its appearance, particularly in Venice where each bartender would have his own Spritz recipe.
